For a cold day, a great recipe would be a slow cooker chicken curry. It is a very simple recipe to make and then it cooks for 8 hours. There are many different ways to make this recipe and also many different types of Curry that can be used. For this particular recipe, Kerala style curry was used. It makes 4 servings. Leftovers can be stored in an airtight container for up to 3 days. Enjoy!
- This curry is different than the butter-heavy ones you are used to
- The coconut and other flavors give it a different flavor, almost akin to Thai over their Northern Cousins.
- Like most curries, be sure to toast all the spices to bring out the aromatics
“I am sitting here, cooking this recipe for fragrant chicken curry scented with an intoxicating mixture of toasted fennel and coriander seeds and a warming combination of cinnamon, nutmeg, and cayenne pepper. The temperature outside is –34°C.”
